Chicken:
1 (3 to 4-pound) frying chicken cut into eight pieces
Sauce:
1/4 cup butter, melted
1/4 cup lemon juice
1 teaspoon dried marjoram leaves
1/2 teaspoon salt
1/4 teaspoon pepper
Heat broiler. Place chicken on greased broiler pan. In 1-quart saucepan stir together all sauce ingredients; brush on chicken. Broil 6 to 8 inches from the heat, turning and basting with sauce every 10 minutes, until chicken is fork tender (30 to 35 minutes). Meanwhile, cook remaining sauce over medium heat, stirring occasionally, until mixture comes to a full boil (2 to 3 minutes). Just before serving, spoon sauce over chicken.
Yield: 6 servings.
